Chickpea Spinach Power Bowl

Hearty chickpeas with sauteed spinach, sun-dried tomatoes, and a lemon-olive oil dressing over brown rice.

Ingredients

  • 1 can chickpeas, drained and rinsed
  • 3 cups fresh spinach
  • 1/4 cup sun-dried tomatoes, chopped
  • 1 cup cooked brown rice
  • 2 tbsp extra virgin olive oil
  • 1 tbsp lemon juice
  • Garlic powder, cumin, salt

Steps

  1. Heat 1 tbsp olive oil in a skillet. Add chickpeas, garlic powder, and cumin. Cook 5 minutes until lightly crispy.
  2. Add spinach and sun-dried tomatoes, cooking until spinach wilts.
  3. Divide brown rice between bowls and top with the chickpea-spinach mixture.
  4. Drizzle with remaining olive oil and lemon juice before serving.
