Walnut Pesto Pasta

Whole wheat pasta tossed with a homemade walnut-basil pesto and cherry tomatoes.

Ingredients

  • 8 oz whole wheat pasta
  • 1/2 cup walnuts
  • 2 cups fresh basil leaves
  • 2 cloves garlic
  • 3 tbsp extra virgin olive oil
  • 2 tbsp nutritional yeast or Parmesan
  • 1 cup cherry tomatoes, halved
  • Salt and pepper

Steps

  1. Cook pasta according to package directions, reserving 1/2 cup pasta water.
  2. Blend walnuts, basil, garlic, olive oil, and nutritional yeast in a food processor until smooth.
  3. Toss drained pasta with pesto, adding pasta water as needed for consistency.
  4. Fold in cherry tomatoes, season with salt and pepper, and serve.
