Vegetable Turmeric Stir-Fry
A colorful, quick stir-fry with broccoli, bell peppers, snap peas, and tofu seasoned with turmeric and sesame oil.

Ingredients
- 2 cups broccoli florets
- 1 red bell pepper, sliced
- 1 cup sugar snap peas
- 8 oz extra-firm tofu, cubed
- 1 tsp ground turmeric
- 1 tbsp sesame oil
- 1 tbsp low-sodium soy sauce
- 1 tsp fresh grated ginger
Steps
- Press tofu and cut into cubes. Heat sesame oil in a wok or large skillet over high heat.
- Add tofu and cook 4 to 5 minutes until golden on all sides. Remove and set aside.
- Add broccoli, bell pepper, snap peas, ginger, and turmeric to the wok. Stir-fry 4 minutes.
- Return tofu to the wok, add soy sauce, and toss to combine. Serve over brown rice.
