Vegetable Turmeric Stir-Fry

A colorful, quick stir-fry with broccoli, bell peppers, snap peas, and tofu seasoned with turmeric and sesame oil.

Ingredients

  • 2 cups broccoli florets
  • 1 red bell pepper, sliced
  • 1 cup sugar snap peas
  • 8 oz extra-firm tofu, cubed
  • 1 tsp ground turmeric
  • 1 tbsp sesame oil
  • 1 tbsp low-sodium soy sauce
  • 1 tsp fresh grated ginger

Steps

  1. Press tofu and cut into cubes. Heat sesame oil in a wok or large skillet over high heat.
  2. Add tofu and cook 4 to 5 minutes until golden on all sides. Remove and set aside.
  3. Add broccoli, bell pepper, snap peas, ginger, and turmeric to the wok. Stir-fry 4 minutes.
  4. Return tofu to the wok, add soy sauce, and toss to combine. Serve over brown rice.
