Turmeric Scrambled Eggs

Ingredients

  • 4 large eggs
  • 1 tsp ground turmeric
  • 1/4 tsp black pepper
  • 1 tbsp extra virgin olive oil
  • 2 cups fresh spinach
  • 1/4 cup cherry tomatoes halved
  • Pinch of sea salt

Steps

  1. Heat olive oil in a skillet over medium heat and wilt the spinach for 2 minutes.
  2. Whisk eggs with turmeric, pepper, and salt in a bowl.
  3. Pour eggs over spinach and gently stir until just set, about 3 minutes.
  4. Top with cherry tomatoes and serve immediately.
