Turmeric Roasted Chicken Thighs

Bone-in chicken thighs marinated in turmeric, garlic, and yogurt, then roasted until deeply golden and tender.

Ingredients

  • 4 bone-in chicken thighs
  • 1/4 cup plain Greek yogurt
  • 1 tbsp turmeric
  • 1 tsp cumin
  • 3 cloves garlic, minced
  • 1 tbsp extra virgin olive oil
  • 1 lemon, sliced
  • Salt and black pepper

Steps

  1. Mix yogurt, turmeric, cumin, garlic, olive oil, salt, and pepper into a marinade.
  2. Coat chicken thighs thoroughly and let marinate for at least 30 minutes (overnight is best).
  3. Arrange on a baking sheet with lemon slices and roast at 425°F for 30 to 35 minutes.
  4. Let rest 5 minutes before serving with roasted vegetables or brown rice.
