Miso Ginger Soup with Greens

Light Japanese-inspired broth with white miso, fresh ginger, shiitake mushrooms, and wilted greens.

Ingredients

  • 2 tbsp white miso paste
  • 1 tbsp fresh ginger, grated
  • 4 cups water
  • 1 cup shiitake mushrooms, sliced
  • 2 cups baby bok choy, chopped
  • 1 tbsp sesame oil
  • 2 green onions, sliced

Steps

  1. Bring water to a gentle simmer (do not boil). Add mushrooms and ginger, cook 5 minutes.
  2. Remove from heat, dissolve miso paste into the broth by whisking.
  3. Add bok choy and let wilt for 2 minutes.
  4. Ladle into bowls, drizzle with sesame oil, and top with sliced green onions.
