Miso Ginger Soup with Greens
Light Japanese-inspired broth with white miso, fresh ginger, shiitake mushrooms, and wilted greens.

Ingredients
- 2 tbsp white miso paste
- 1 tbsp fresh ginger, grated
- 4 cups water
- 1 cup shiitake mushrooms, sliced
- 2 cups baby bok choy, chopped
- 1 tbsp sesame oil
- 2 green onions, sliced
Steps
- Bring water to a gentle simmer (do not boil). Add mushrooms and ginger, cook 5 minutes.
- Remove from heat, dissolve miso paste into the broth by whisking.
- Add bok choy and let wilt for 2 minutes.
- Ladle into bowls, drizzle with sesame oil, and top with sliced green onions.
