Ingredients

  • 1 cup frozen pineapple chunks
  • 1 tsp fresh grated ginger
  • 1/2 cucumber, peeled and chopped
  • 6 fresh mint leaves
  • 1 cup coconut water
  • 1/2 lime, juiced
  • 1 tsp honey (optional)

Steps

  1. Add coconut water, cucumber, ginger, and mint to a blender. Blend briefly.
  2. Add frozen pineapple and lime juice.
  3. Blend on high until smooth, about 45 seconds.
  4. Taste and add honey if desired. Serve immediately over ice.
