Ginger Garlic Shrimp Stir-Fry

Quick stir-fry of shrimp with ginger, garlic, snap peas, and bell peppers served over brown rice.

Ingredients

  • 1 lb large shrimp, peeled and deveined
  • 1 tbsp fresh ginger, minced
  • 3 cloves garlic, minced
  • 1 cup snap peas
  • 1 red bell pepper, sliced
  • 1 tbsp sesame oil
  • 1 tbsp low-sodium soy sauce
  • 1 cup cooked brown rice

Steps

  1. Heat sesame oil in a wok or large skillet over high heat.
  2. Add garlic and ginger, stir-fry 30 seconds.
  3. Add shrimp, snap peas, and bell pepper. Cook 4 to 5 minutes until shrimp are pink and curled.
  4. Add soy sauce, toss to coat, and serve over brown rice.
