Vanilla Chia Pudding

Simple overnight chia pudding with coconut milk, vanilla, and fresh fruit that provides omega-3s and fiber.

Ingredients

  • 1/4 cup chia seeds
  • 1 cup coconut milk (unsweetened)
  • 1 tsp vanilla extract
  • 1 tbsp maple syrup
  • 1/2 cup fresh raspberries
  • 1 tbsp sliced almonds

Steps

  1. Whisk chia seeds, coconut milk, vanilla, and maple syrup together in a jar.
  2. Refrigerate for at least 4 hours or overnight, stirring once after the first 30 minutes.
  3. Divide between two bowls and top with raspberries and sliced almonds.
  4. Serve chilled.
