Ingredients

  • 2 cups broccoli florets
  • 3 cups fresh spinach
  • 3 cloves garlic, minced
  • 2 tbsp extra virgin olive oil
  • 1 lemon, juiced
  • 3 cups vegetable broth
  • Salt, pepper, and nutmeg

Steps

  1. Heat olive oil in a pot. Saute garlic for 1 minute until fragrant.
  2. Add broccoli and broth. Simmer 12 to 15 minutes until broccoli is very tender.
  3. Add spinach and cook 2 minutes until wilted. Blend until smooth.
  4. Stir in lemon juice, season with salt, pepper, and a pinch of nutmeg. Serve warm.
