Roasted Beet and Goat Cheese Salad

Ingredients

  • 3 medium beets, peeled and quartered
  • 2 oz goat cheese, crumbled
  • 4 cups arugula
  • 1/4 cup walnuts
  • 2 tbsp extra virgin olive oil
  • 1 tbsp balsamic vinegar
  • Salt and pepper

Steps

  1. Toss beets with 1 tbsp olive oil, salt, and pepper. Roast at 400°F for 35 minutes until tender.
  2. Let beets cool slightly, then cut into bite-sized pieces.
  3. Arrange arugula on plates and top with beets, goat cheese, and walnuts.
  4. Drizzle with remaining olive oil and balsamic vinegar. Serve.
