Ingredients
- 3 medium beets, peeled and quartered
- 2 oz goat cheese, crumbled
- 4 cups arugula
- 1/4 cup walnuts
- 2 tbsp extra virgin olive oil
- 1 tbsp balsamic vinegar
- Salt and pepper
Steps
- Toss beets with 1 tbsp olive oil, salt, and pepper. Roast at 400°F for 35 minutes until tender.
- Let beets cool slightly, then cut into bite-sized pieces.
