Ingredients
- 1 cup walnuts
- 1 cup Medjool dates, pitted
- 2 tbsp unsweetened cocoa powder
- 1 tsp vanilla extract
- 1 tbsp chia seeds
- Pinch of sea salt
- Unsweetened shredded coconut for rolling
Steps
- Process walnuts in a food processor until finely ground.
- Add dates, cocoa powder, vanilla, chia seeds, and salt. Blend until the mixture sticks together.
- Roll into 12 balls, about 1 tbsp each.
- Roll in shredded coconut and refrigerate for at least 30 minutes before serving.
