Sweet Potato Breakfast Hash

Cubed sweet potato, bell peppers, and onion sauteed in olive oil with turmeric and topped with a fried egg.

Ingredients

  • 2 medium sweet potatoes, diced
  • 1 red bell pepper, diced
  • 1/2 onion, diced
  • 2 tbsp extra virgin olive oil
  • 1/2 tsp turmeric
  • 1/2 tsp smoked paprika
  • 2 eggs
  • Salt and pepper to taste

Steps

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Add sweet potatoes and cook 10 minutes, stirring occasionally until tender and slightly crispy.
  3. Add bell pepper, onion, turmeric, and paprika. Cook another 5 minutes.
  4. Make two wells in the hash, crack eggs into them, cover, and cook until whites are set.
  5. Season with salt and pepper and serve from the skillet.
