Sweet Potato Black Bean Chili

Ingredients

  • 2 medium sweet potatoes, diced
  • 1 can black beans, drained and rinsed
  • 1 can diced tomatoes (14 oz)
  • 1 tbsp chili powder
  • 1 tsp cumin
  • 1 tbsp extra virgin olive oil
  • 2 cups vegetable broth
  • Salt and lime wedges for serving

Steps

  1. Heat olive oil in a large pot. Add sweet potatoes and cook 5 minutes.
  2. Add chili powder and cumin, stirring 1 minute until fragrant.
  3. Pour in tomatoes, black beans, and broth. Bring to a boil, then reduce to a simmer.
  4. Cook 25 to 30 minutes until sweet potatoes are tender. Serve with lime wedges.
