Ingredients
- 2 medium sweet potatoes, diced
- 1 can black beans, drained and rinsed
- 1 can diced tomatoes (14 oz)
- 1 tbsp chili powder
- 1 tsp cumin
- 1 tbsp extra virgin olive oil
- 2 cups vegetable broth
- Salt and lime wedges for serving
Steps
- Heat olive oil in a large pot. Add sweet potatoes and cook 5 minutes.
- Add chili powder and cumin, stirring 1 minute until fragrant.
- Pour in tomatoes, black beans, and broth. Bring to a boil, then reduce to a simmer.
