Ingredients

  • 4 large eggs
  • 3 oz smoked salmon, torn into pieces
  • 1 tbsp fresh dill, chopped
  • 1 tbsp fresh chives, chopped
  • 1 tbsp extra virgin olive oil
  • Black pepper
  • 1 tbsp cream cheese (optional)

Steps

  1. Whisk eggs with black pepper in a bowl.
  2. Heat olive oil in a non-stick skillet over medium-low heat.
  3. Pour in eggs and gently stir with a spatula. When half set, fold in smoked salmon and cream cheese.
  4. Remove from heat while still slightly soft. Top with dill and chives. Serve immediately.
