Sardine Toast with Lemon and Herbs

Ingredients

  • 1 can wild sardines in olive oil, drained
  • 2 slices sprouted grain bread
  • 1 tbsp lemon juice plus zest
  • 1 tbsp extra virgin olive oil
  • 2 tbsp chopped fresh parsley
  • Pinch of red pepper flakes
  • Sea salt and black pepper

Steps

  1. Toast the bread until crisp.
  2. Arrange sardines on the toast and gently mash with a fork.
  3. Drizzle with olive oil and lemon juice, then scatter lemon zest and parsley.
  4. Season with red pepper flakes, salt, and pepper. Serve immediately.
