Ingredients

  • 1 can wild sardines in olive oil
  • 2 hard-boiled eggs, halved
  • 1 cup green beans, blanched
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup Nicoise or Kalamata olives
  • 4 cups mixed greens
  • 2 tbsp extra virgin olive oil
  • 1 tbsp Dijon mustard and red wine vinegar

Steps

  1. Arrange mixed greens on two plates.
  2. Top with sardines, egg halves, green beans, tomatoes, and olives.
  3. Whisk olive oil, Dijon mustard, and red wine vinegar into a dressing.
