Ingredients

  • 2 whole wheat tortillas
  • 1/4 cup hummus
  • 1/2 cup shredded carrots
  • 1/2 cup sliced red bell pepper
  • 1/2 cup shredded red cabbage
  • 1/2 avocado, sliced
  • 1/2 cup alfalfa sprouts
  • 1 tbsp lemon juice

Steps

  1. Spread hummus evenly across each tortilla.
  2. Layer carrots, bell pepper, cabbage, avocado, and sprouts in a line down the center.
  3. Squeeze lemon juice over the vegetables.
  4. Fold in the sides and roll tightly. Cut in half and serve.
