Lentil Walnut Tacos

Ingredients

  • 1 cup cooked lentils
  • 1/2 cup walnuts, finely chopped
  • 1 tsp cumin
  • 1/2 tsp smoked paprika
  • 6 corn tortillas
  • 1/2 avocado, sliced
  • 1 cup shredded red cabbage
  • 1 lime, juiced

Steps

  1. Pulse walnuts in a food processor until crumbly. Mix with cooked lentils, cumin, and paprika.
  2. Heat the mixture in a skillet for 5 minutes until warmed through.
  3. Warm corn tortillas in a dry pan.
  4. Fill tortillas with lentil-walnut mixture, cabbage, avocado, and a squeeze of lime.
