Lentil Bolognese

Rich tomato-based sauce with red lentils standing in for ground meat, served over whole wheat pasta.

Ingredients

  • 1 cup red lentils
  • 1 can crushed tomatoes (28 oz)
  • 1 carrot, finely diced
  • 1 celery stalk, finely diced
  • 1/2 onion, diced
  • 2 cloves garlic, minced
  • 1 tbsp extra virgin olive oil
  • 8 oz whole wheat pasta

Steps

  1. Heat olive oil in a large pot. Saute onion, carrot, celery, and garlic for 5 minutes.
  2. Add crushed tomatoes, lentils, and 1 cup water. Season with salt, pepper, and Italian herbs.
  3. Simmer 25 to 30 minutes until lentils are completely tender and sauce thickens.
  4. Cook pasta according to package directions. Serve sauce over pasta with fresh basil.
