Herb-Crusted Trout

Fresh trout fillets coated in a mixture of fresh herbs, lemon zest, and almond meal, then pan-seared in olive oil.

Ingredients

  • 2 whole trout fillets
  • 2 tbsp almond meal
  • 2 tbsp fresh parsley, chopped
  • 1 tbsp fresh dill, chopped
  • Zest of 1 lemon
  • 2 tbsp extra virgin olive oil
  • Salt and pepper

Steps

  1. Mix almond meal, parsley, dill, lemon zest, salt, and pepper in a shallow dish.
  2. Press each trout fillet into the herb mixture to coat one side.
  3. Heat olive oil in a skillet over medium-high heat. Cook fillets herb-side down for 3 minutes, then flip and cook 3 more.
  4. Serve with steamed vegetables and lemon wedges.
