Herb-Crusted Trout
Fresh trout fillets coated in a mixture of fresh herbs, lemon zest, and almond meal, then pan-seared in olive oil.

Ingredients
- 2 whole trout fillets
- 2 tbsp almond meal
- 2 tbsp fresh parsley, chopped
- 1 tbsp fresh dill, chopped
- Zest of 1 lemon
- 2 tbsp extra virgin olive oil
- Salt and pepper
Steps
- Mix almond meal, parsley, dill, lemon zest, salt, and pepper in a shallow dish.
- Press each trout fillet into the herb mixture to coat one side.
- Heat olive oil in a skillet over medium-high heat. Cook fillets herb-side down for 3 minutes, then flip and cook 3 more.
- Serve with steamed vegetables and lemon wedges.
