Ginger Carrot Soup

Ingredients
- 1 lb carrots, peeled and chopped
- 1 tbsp fresh ginger, grated
- 1 can light coconut milk
- 1 tsp ground turmeric
- 1 tsp ground cumin
- 1 tbsp extra virgin olive oil
- 3 cups vegetable broth
- Salt and black pepper
Steps
- Heat olive oil in a large pot. Saute ginger for 1 minute until fragrant.
- Add carrots, turmeric, cumin, and broth. Bring to a boil, then simmer 20 minutes until carrots are tender.
- Stir in coconut milk and blend until smooth with an immersion blender.
- Season with salt and pepper. Serve warm with a swirl of coconut milk on top.
