Ginger Carrot Soup

A velvety, warming soup made with carrots, fresh ginger, coconut milk, and anti-inflammatory spices.

Ingredients

  • 1 lb carrots, peeled and chopped
  • 1 tbsp fresh ginger, grated
  • 1 can light coconut milk
  • 1 tsp ground turmeric
  • 1 tsp ground cumin
  • 1 tbsp extra virgin olive oil
  • 3 cups vegetable broth
  • Salt and black pepper

Steps

  1. Heat olive oil in a large pot. Saute ginger for 1 minute until fragrant.
  2. Add carrots, turmeric, cumin, and broth. Bring to a boil, then simmer 20 minutes until carrots are tender.
  3. Stir in coconut milk and blend until smooth with an immersion blender.
  4. Season with salt and pepper. Serve warm with a swirl of coconut milk on top.
