Coconut Turmeric Panna Cotta

Golden-hued panna cotta made with coconut cream, turmeric, ginger, and a berry compote.

Ingredients

  • 1 can full-fat coconut cream
  • 1 tsp turmeric powder
  • 1/2 tsp ginger powder
  • 2 tbsp honey
  • 1 tsp vanilla extract
  • 1.5 tsp gelatin powder
  • 1/2 cup mixed berries for compote
  • 1 tbsp lemon juice

Steps

  1. Sprinkle gelatin over 2 tbsp cold water and let bloom for 5 minutes.
  2. Warm coconut cream with turmeric, ginger, honey, and vanilla over low heat. Do not boil.
  3. Stir in bloomed gelatin until dissolved. Pour into 4 ramekins and refrigerate 4 hours.
  4. Gently warm berries with lemon juice to make a compote. Spoon over set panna cotta and serve.
