Baked Salmon with Roasted Vegetables

Ingredients

  • 2 wild salmon fillets
  • 2 cups broccoli florets
  • 1 cup cherry tomatoes
  • 1 tbsp extra virgin olive oil
  • 2 cloves garlic, minced
  • Juice of 1 lemon
  • Fresh thyme and rosemary
  • Salt and pepper

Steps

  1. Preheat oven to 400°F. Toss broccoli and tomatoes with olive oil, garlic, salt, and pepper on a sheet pan.
  2. Place salmon fillets on the pan, squeeze lemon over everything, and scatter herbs.
  3. Bake 15 to 18 minutes until salmon flakes easily.
  4. Plate salmon over vegetables and spoon pan juices on top.
