Anti-Inflammatory Turmeric Vegetable Soup

A warming, deeply colored soup built on turmeric, ginger, carrots, and sweet potato with coconut milk.

Ingredients

  • 2 cups diced sweet potato
  • 2 carrots, chopped
  • 1 tbsp fresh ginger, grated
  • 1 tsp turmeric
  • 1 can coconut milk (light)
  • 4 cups vegetable broth
  • 1 tbsp extra virgin olive oil
  • Black pepper and sea salt

Steps

  1. Heat olive oil in a large pot. Saute ginger and turmeric for 1 minute until fragrant.
  2. Add sweet potato, carrots, and broth. Bring to a boil, then simmer 20 minutes.
  3. Stir in coconut milk and blend until smooth with an immersion blender.
  4. Season with salt and black pepper. Serve with crusty bread or on its own.
