Anti-Inflammatory Turmeric Vegetable Soup
A warming, deeply colored soup built on turmeric, ginger, carrots, and sweet potato with coconut milk.

Ingredients
- 2 cups diced sweet potato
- 2 carrots, chopped
- 1 tbsp fresh ginger, grated
- 1 tsp turmeric
- 1 can coconut milk (light)
- 4 cups vegetable broth
- 1 tbsp extra virgin olive oil
- Black pepper and sea salt
Steps
- Heat olive oil in a large pot. Saute ginger and turmeric for 1 minute until fragrant.
- Add sweet potato, carrots, and broth. Bring to a boil, then simmer 20 minutes.
- Stir in coconut milk and blend until smooth with an immersion blender.
- Season with salt and black pepper. Serve with crusty bread or on its own.
